Any of the upland game species (and, naturally chicken) are amazing if you marinate the bird for an hour or so in the refrigerator in a Ziploc bag and Safari Hot Sauce. Then put the bird on the grill or under the broiler and baste liberally with Hot Sauce. The drippings can be collected and served to pour over rice as a side dish.  This one will definitely warm the cockles of your palate!

    Make several slashes in the flesh with a sharp knife to allow the flavours of the marinade to get in and the fat to drain out.

    Spread half the sauce over a spatchcocked chicken, chicken joints or chicken wings.
